Christmas is on our minds here at Forage long before the first carol is being belted out in the supermarket isles. From late August we start gathering  ingredients for our wild Christmas treats - from damsons and rosehips to cobnuts, quinces and elderberries to local russet apples we're currently beavering away pureeing, chopping and seeping fruit, cracking, roasting and chopping nuts and getting ready for the day that all our ingredients are safely gathered, and ready to be transformed into something wild and utterly wonderful.

Wild Quincemeat  £5.95   330g    (makes 18 mince pies)

A zingy and fruity mincemeat, packed full of ingredients that celebrate the bounty of autumn and early winter - Herefordshire quinces, cobnuts, damsons and russets, blended with quality vine fruits, damson vodka and ginger wine - a Bramley Hedge store cupboard of ingredients!

Wildly Chocolatey Mincemeat £5.95 330g (makes 16 mince pies)

Utterly delicious - a chocolate lovers dream!  cobnuts, russets and vine fruits in a citrusy damson puree, laced with vodka and ginger wine and of course generous amounts of dark melted chocolate - wonderful!

Rosehip Mulling Syrup £3.50  100ml (will mull 1 bottle of wine or 1l of cider) **£7.95 for 300ml - will mull 3 bottles of wine / 3 litres of cider**

We love inventing new ways to use wild ingredients and creating this was one of our proudest moments. A completely addictive festive mulling syrup  We made the the classic recipe for rosehip syrup go all festive with wonderful Christmas spices, citrus zing and ginger. This fruity little number will give you an instant amazing mulled cider, wine or apple juice. It'll even give you a hit of vitamin C - so you can have an extra glass with a clear conscience!

Whimberry and Grape thinning jelly £3.50 100g

Whimberries (or bilberries) grow wild around the Black Mountains and in late summer pickers jealously guard their  'turf' - one taste of the wild whimberry and you'll see why! They are absolutely delicious, sharp and sweet - and when paired with the acidic young grape thinnings you end up with a cross between cranberry sauce and redcurrant jelly - a perfect, British accompaniment to roast turkey, duck or goose.

Wildly traditional Christmas pudding £20 serves 6 -8 people (comes in a ceramic mason and cash pudding bowl)

Local damsons, cobnuts, walnuts, quinces, sweet chestnuts and duck eggs are all lovingly stirred up and slowly steamed in a classic Mason and Cash pudding bowl, preserved until Christmas by generous glugs of damson vodka, rum and brandy. This pudding has flavour and texture abounding, yet feels light and refreshing - a wonderful finish to a wild Christmas meal!

A moist, spiced and utterly delicious celebration of the best of wild fruits and nuts. Our Christmas cake is a joy to look at and even more of a pleasure to eat - it won't be hanging around on the side board for long!!
